How to Make Eggnog

Ingredients needed to make Eggnog:

  • 4 egg yolks
  • 4 egg whites
  • 1 cup heavy cream
  • 1 pint whole milk
  • 2 oz bourbon
  • 1/3 cup +1 tbsp sugar
  • 1 tsp nutmeg, freshly grated
  • Dash of ground cinnamon
  • 75 ml somerset cider brandy
  • 25 ml madiera

Cooking instructions for Eggnog:

  • Whisk the egg yolks in a bowl of stand mixer until they turn pale yellowish in colour.
  • Stir in 1/3 cup of sugar, adding it in batches while you continue to whisk the mixture.
  • Once all of the sugar is used up and dissolves completely, pour in the milk as well as cream and stir them well together.
  • Add splashes of the bourbon, brandy as well as Madiera, one after another, and whisk the mixture until they are evenly distributed throughout the mixture.
  • Sprinkle the ground cinnamon as well as grated nutmeg over the mixture and stir well to mix.
  • Whisk the egg whites in a separate bowl of the stand mixer and whisk them until it becomes fluffy and firms soft yet firm peaks.
  • Sprinkle 1 tbsp of sugar on it and continue to whisk until the former dissolves.
  • Once the egg whites form stiff peaks, fold it into the egg yolk mixture and leave it in the refrigerator to chill before serving.
  • In case you are not comfortable with eating raw eggs, you can cook the eggnog too.
  • To prepare cooked eggnog, make the sugar-egg yolk mixture  and set aside.
  • Add cream, milk as well as spices in a medium saucepan and heat it over high flame.
  • Bring the mixture to a boil, while stirring frequently and then remove from heat.
  • Spoon a couple of tbsp of the warm, spiced milk into the egg mixture so that both attains same temperature and then return everything back to the pan.
  • Turn on the heat and continue to cook until the temperature rises up to 160 degrees F
  • Remove from heat again and whisk in the alcohols until properly blended.
  • Chill the mixture in the refrigerator and meanwhile whisk the egg whites as instructed above.
  • Once the egg yolk-milk mixture chills, fold in the sugar-egg white blend and whisk them together into eggnog.
  • Serve chilled and have fun!
