How to Make Cantaloupe Ice Pops

Ingredients needed to make Cantaloupe Ice Pops
For the pops:
- 1 cantaloupe ( 2 lb), peeled and seeds scraped out
- ¼ cup Campari
- ¾ cup simple syrup ( recipe below)
For the simple syrup:
- 2/3 cup water
- 2/3 cup organic cane sugar
Cooking instructions for Cantaloupe Ice Pops:
- To make the syrup, pour the water into a small saucepan and add the sugar to it.
- Heat the mixture over moderately-high heat, while stirring, until it begins to simmer.
- Continue to cook likewise until the sugar dissolves to form a transparent blend.
- Remove from heat and set the syrup aside to cool.
- Pour it into an air-tight container and seal to store in the refrigerator until required.
- To make the pops, slice the cantaloupe into large pieces and toss them into a food processor.
- Pulse them into a smooth puree, measuring upto 18 fl oz (2 ¼ cups).
- Pour the puree into a bowl and stir in the simple syrup until well combined; adjust the amount of syrup according to your preferred level of sweetness.
- Drizzle the Campari gradually while stirring it into the mixture at the same time, until its flavour becomes evident.
- Spoon the mixture into ice lollypop moulds, leaving a small space above at the surface.
- Introduce the sticks into it and leave it in the freezer for 4-5 hours until they frozen solid.
- Remove from the moulds and serve right away.
