How To Make Horchata
Makes: 8 glasses
Preparation time: 4 hours
Cooking time: 30 mins
Ingredients needed to make Houchata:
- 1 cup long grain rice, washed
- ½ cup white sugar
- 2 quarts water
- 1 tsp vanilla extract
- 1 cinnamon stick
- Ice cubes
Cooking instructions for Houchata:
- Place the rice in a large saucepan and fill it up with water.
- Drop a cinnamon stick into it and set aside for about 3 hours to soak the rice.
- Cook the mixture over moderate heat until it begins to boil and reduce it to a simmer over slow flame.
- Continue to do so for about half an hour and tip the contents of the saucepan into a blender.
- Pulse them into a smooth puree and pass it through a fine mesh sieve to strain.
- Add a splash of vanilla into the strained liquid, along with some sugar if required.
- Whisk them all together until well combined and leave it in the refrigerator to chill.
- Pour it into tall glass and plop in few ice cubes in each glass.
- Serve chilled.
