About Vietnamese Egg Coffee
The Vietnamese egg coffee, also known as Cà Phê Trứng, is a Vietnamese coffee resembles cappuccino but of course adds the egg. It has been called “liquid tiramisu,” and can stand alone as a dessert drink. .
The history of the egg coffee is rumored to have its origins in the time of Vietnam’s King Le Thanh Tong (1538–1583). Le Thanh Tong was a king who loved eggs.
It is also said to originate with a general who lived during the 9th century AD in Vietnam. During the 16th and 17th centuries. The general was said to drink about five cups of coffee each day.
The most common reputed source to its origins is to Mr. Nguyen, a hotel bartender who is said to have invented the drink during fresh milk shortage in the 1940s. The egg yolk was used to replace the foamed milk found in European-style coffees.
Mr. Nguyen later founded Café Giang Hanoi’s, located in an alleyway in Hanoi’s Old Quarter. The cafe is still popular with both locals and travelers. In fact, the drink is often referred to a Hanoi egg coffee.
How to Make Egg Coffee
While the traditional Vietnamese egg coffee is made with ground robusta coffee, finding the actual Vietnamese coffee can sometimes be difficult outside that part of the world. To make an easy home version, simply replace the coffee with espresso. A dark roast is preferred. In the alternative use a french press or strongly brewed dark roast coffee.
You can also use a Vietnamese coffee powder, but fresh brewing is preferred.
When you make Vietnamese egg coffee, it’s important to use only the freshest eggs, which makes it a delicious and nutritious morning beverage.
To make Vietnamese egg coffee, place an egg yolk in a bowl, add 2 teaspoons of sweetened condensed milk, and whisk it into a froth. Spoon in a bit of the espresso or coffee and whip until combined. Then top the remaining coffee with the mixture.
Substitute Milk and Sugar for Condensed Milk
An alternate recipe can substitute one cup of milk, a tablespoon of sugar, and a tablespoon of vanilla extract for the sweetened condensed milk. You might want to heat it a bit in the microwave or on the stove.
You can also use sugar substitutes or leave out the sugar for a low carb or keto drink.
What to Serve with Egg Coffee

Vietnamese Egg Coffee Recipe
Vietnamese egg coffee is a delightful drink famous in Hanoi. Egg coffee is easy to make and is a great way to add protien to your diet.
Ingredients
- 1-2 cups dark roast coffee or espresso (amount to taste)
- 1 egg yolk
- 2 tsp condensed milk, sweetened
Instructions
- Brew the coffee, or prepare the espresso.
- Crack the egg and separate the yolk from its white.
- Place the yolk into a small bowl and whisk it rigorously along with condensed milk until it froths up and turns fluffy.
- Spoon in a tbsp of the brewed coffee and beat it into the mixture until well combined.
- Pour rest of the brewed coffee into a clean cup and top it up with the whisked mixture.
- Serve right away.
