How to Bake Roasted Veggie-Cheese Tart

Ingredients needed to make Roasted Veggie-Cheese Tart:
For the beetroot:
- 4 small fresh beetroot, trimmed
- 2 egg whites
- 1 lb table salt
For the tart:
- 12 oz ready-made puff pastry sheet
- 5 oz soft goat cheese
- 10 cherry tomatoes
- 1 courgette, trimmed and cut into bite-sized chunks
- 2 garlic cloves, peeled
- 3-4 fresh thyme sprigs
- 1 head fennel, fronds chopped of and sliced into bite-sized chunks
- 1 egg yolk, beaten
- 2 tbsp olive oil, plus more for drizzling
- Plain flour, for dusting
- Salt and freshly ground black pepper to taste
Cooking instructions for Roasted Veggie-Cheese Tart:
- To roast the beetroot, warm up your oven to 350 degrees f.
- Place the salt in a large mixing bowl and whisk in the egg white gradually, until it becomes thick enough to resemble a cement mixture.
- Spread it all over the beetroot until well coated and place them on a baking dish.
- Bake the veggie for an hour or until the salt-egg white mixture makes a hard crust around it and the beet is cooked through.
- Break the crust open using the edge of a spoon; peel the beetroot and cut it into thin slices; keep them aside.
- Arrange the courgette and fennel across a roasting pan and drop in the garlic cloves.
- Add a lashing of olive oil over them and toss them together to coat well.
- Throw in the thyme sprigs and roast the veggies in the hot oven for about 20 minutes or until they are just cooked.
- Remove from oven and get rid of the garlic cloves plus thyme sprigs; allow the mixture to cool to some extent.
- Reset the temperature setting of oven to 400 degrees F and preheat it further.
- Whisk the egg yolk until it breaks down completely and set aside.
- Spread the sheet of puff pastry across a baking tray, dusted earlier with small amount of flour and paint its edges with the beaten egg yolk.
- Spread the roasted veggies across the sheet, followed by slices of salt-roasted beetroot and top it up with cherry tomatoes.
- Finish it off with crumbled goat cheese and drizzle olive oil all over them, followed by a dash of seasonings to taste.
- Bake it for about 20 minutes or until the pastry puffs up to become crispy golden.
- Serve right away.
