How to Bake Blue Cheese Sables
Yields: 24 cookies

Ingredients needed to make Blue Cheese Sables:
- 2 ¼ cups all purpose flour
- ½ cup blue cheese, at room temperature
- 18 tbsp unsalted butter, softened
- 2 egg yolks, at room temperature
- ½ cup sugar
- ¼ tsp salt
Cooking instructions for Blue Cheese Sables:
- Place the cheese and butter in a bowl and beat them with an electric mixer, set at moderately high speed, for a minute or until they are well combined.
- Tip in the sugar as well as a dash of salt and continue to beat for another minute or until it turns creamier.
- Add the egg yolks and beat them thoroughly into the mixture until well mixed and form a sticky batter.
- Fold the flour gradually into the mixture, while beating it into the mixture after every addition, until all of it is incorporated to form a flaky dough which clumps when pressed together.
- Roll the dough into a 2’’ thick cylinder and cover it with a cling film.
- Leave in the fridge for about 4 hours while warming up the oven to 350 degrees at the end of the last hour.
- Spread a parchment paper across a baking sheet and set aside.
- Carve out ½’’ thick slices from the dough cylinder and arrange them on the lined baking sheet, an inch apart.
- Bake in the hot oven for about 20 minutes or until the edges brown slightly.
- Remove from oven and set aside to cool completely.
- Store them in an air-tight container for as long as a month.
