How to Cook Camembert Flatbreads
Yields: 16 small flatbreads

Cooking time: 40 mins
Ingredients needed to make Camembert Flatbreads:
- 1 lb 2 oz white bread flour
- 1 package (7 gm) instant dried yeast
- 5 ½ oz quince paste
- 7 oz Camembert
- 1 fl oz lukewarm water
- ½ oz salt
- Flavorless oil, for greasing the pan
Cooking instructions for Camembert Flatbreads:
- Add the flour into the bowl, attached to stand mixer, and stir in yeast and a dash of salt.
- Process them with a dough hook attachment of the mixer at low speed while pouring in ¾ of the water in a steady stream.
- Set aside for a minute and pour in remaining water.
- Whisk it again for about 7 minutes at a higher speed, set at medium-high until the ingredients gather together to form a soft and smooth dough.
- In case you don’t have an electric mixer, place all the dry ingredients into a large bowl and pour in ¾ of the water gradually over them while kneading them together with the other hand.
- Continue to knead them for about 2 minutes and transfer them to a lightly-floured working counter to knead further for another 10 minutes or until they turn smooth and glossy.
- Chop the cheese into smaller chunks and crumble the quince jelly.
- Knead them into the dough with your hand until they distribute evenly into it.
- Transfer the dough into a lightly-oiled bowl and roll it across the sides to grease with the oil.
- Wrap it up with a cling film and set aside for an hour at room temperature, until it rises to become twice its previous size.
- Place the risen dough onto a lightly-floured working counter and punch it several times with your knuckles.
- Split the dough into 16 equal parts and shape each part into a ball.
- Flatten each ball with a rolling pin, into a 5’’ wide circle and set aside.
- Heat a heavy skillet over high heat and wipe it with a paper towel, dipped in oil, to grease it lightly.
- Place one dough circle onto the oiled skillet and toast for a couple of minutes or until it turns golden brown; flip it over and brown the other side in a similar fashion.
- Wrap it up in a dry kitchen towel to keep warm and toast rest of the flatbreads in the same manner.
- Serve warm, along with your favourite stuffing.
