How to Cook Panelle

Yields: 48 fritters

Preparation time: 30 mins

Cooking time: 10 mins

Ingredients needed to make Panelle:

  • 2 1/3 cups chickpea flour
  • Canola oil, for frying
  • Sea salt and freshly ground black pepper to taste

Cooking instructions for Panelle:

  • Place the chickpea flour in a 4 quart saucepan and stir in a dash each of the seasonings.
  • Empty 3 cups of water gradually while stirring it into the mixture until they form a uniform mixture, free of lumps.
  • Cook the mixture for about 6 minutes, over moderately high heat, while whisking it relentlessly, until it thickens into a paste-like consistency.
  • Lower the heat considerably and continue to cook over slow heat for another couple of minutes, while stirring constantly, until the mixture leaves the sides of the pan.
  • Spread ½ cup of the mixture swiftly into 9’’ wide circles onto a parchment paper, until the circles are about ¼’’ in thickness.
  • Let them rest for about 20 minutes to cool down.
  • Peel off the parchment paper and place the rounds on top of one another.
  • Slice them into 8 wedges and set aside.
  • Pour oil in a 6-quart dutch oven until it stands a couple of inches from the base.
  • Heat it over moderately high flame until it reaches 375 degrees.
  • Drop in the wedges carefully into the hot oil, few at a time, and deep-fry for about 3 minutes, flipping them over several times, until they turn crispy golden brown.
  • Drain them with the help of slotted spoon, into a plate and dab them with paper towels to get rid of any excess grease.
  • Dust a dash of salt all over them and serve right away.
