How to Make Strawberry Meringue Buttercream

Strawberry Meringue Buttercream is a unique frosting that is great for frosting for cupcakes!

Ingredients

  • 1 1/2 cups (12 ounces) strawberry jam, processed in a food processor
  • 1 tsp. pure vanilla extract
  • 1 1/2 cups unsalted butter, cut into tablespoons, at room temperature
  • 1 1/4 cups sugar
  • 4 large egg whites
  • Optional: red food coloring

Instructions

  1. Set a metal or electric mixer bowl over a pan of boiling water
  2. Mix sugar and egg whites in the bowl, stirring frequently, until the mixture is about 160 degrees and the sugar is dissolved.
  3. Transfer to electric mixer bowl to the electric mixer fitted with the whisk attachment or use a hand mixer on high.
  4. Whisk the egg mixture on high speed until it holds stiff peaks.
  5. Continue whisking for about 6 minutes, until the mixture is cooled and fluffy.
  6. Shift electric mixer to paddle attachment or change hand mixer on medium-low.
  7. Set the mixer to medium-low speed; add several tablespoons of butter at a time, beating thoroughly after each addition.
  8. Add in vanilla and beat on the lowest for about 2 minutes, to remove air bubbles.
  9. Using a rubber spatula, stir in strawberry jam until the frosting is very smooth.
  10. Add food coloring if desired for a brighter color.
