How to Make Jelly Doughnuts

Ingredients needed to make Jelly Doughnuts:

  • 1 2/3 cup all purpose flour
  • 1 tsp dried yeast
  • 1 egg
  • 1 egg yolk
  • 2 tbsp sugar
  • Pinch of salt
  • ¼ cup lukewarm milk
  • 2 drops vanilla extract
  • 3 tbsp vegetable oil
  • jam of your preferred flavour
  • vegetable oil, for deep-frying
  • icing sugar, for dusting

Cooking instructions for Jelly Doughnuts:

  • Stir in the yeast into the lukewarm milk, along with a tsp of sugar until well combined; allow to rest for about 10 minutes or until the yeast becomes active and the mixture turns frothy.
  • Crack the egg into a medium bowl and add the egg yolk as well as remaining sugar.
  • Whisk them together thoroughly until mixed thoroughly and the sugar dissolves.
  • Drizzle the oil into it, along with a splash of vanilla and salt and continue to beat the mixture until well mixed.
  • Add the flour, few tbsp at a time, and fold it into the mixture, until all of it is incorporated into the mixture to form a soft and smooth dough.
  • Place the dough onto a lightly floured flat surface and knead the dough for about 4-5 minutes, dusting it with more flour if it appears too sticky.
  • Transfer it to a pre-oiled bowl and roll it along its sides to oil all over.
  • Wrap its surface with a plastic wrap and allow to rest for a couple of hours, in a warm place, until it rises to double its previous size.
  • Return it to the floured surface and punch it down for several minutes to deflat it.
  • Flatten it out into a ¼’’ thick rectangle, using a rolling pin, and carve out 2’’ wide discs with the help of a cookie cutter.
  • Gather the scraps together and roll it into a large ball.
  • Process it similarly to cut out more discs from it.
  • Spoon in small amount of jam at the middle of each dough disc and paint its sides with small amount of water.
  • Place another disc on top and press the open ends together firmly to seal.
  • Place it on a floured plate and make rest of the doughnuts in a similar fashion.
  • Set them aside for half an hour or until they rise up again.
  • Pour in vegetable oil into a deep fryer until it stands 1 ½’’ from the base and heat it to moderate hotness.
  • Working in batches, lower the stuffed doughnuts into the hot oil and deep-fry them for 3-4 minutes or until it browns nicely.
  • Flip it over and fry for another minute before draining it out into a tray lined with paper towels.
  • Once all the doughnuts are fried, dust them generously with icing sugar and serve warm.
