How to Make Mohan Thal

Yields: 10-15 sweets

Preparation time: 30 mins + 5 hours ( inactive)

Cooking time: 1 hour

Ingredients needed to make Mohan Thal:

  • 180 gms yellow gram flour
  • Seeds of 4 cardamom pods, powdered
  • 160 gms ghee

For the sugar syrup:

  • 30 ml milk
  • 180 ml water
  • 200 gms sugar

For serving:

  • 2 tbsp chopped pistachios
  • 2 tbsp chopped almonds

Cooking instructions for Mohan Thal:

  • Spread the gram flour in a plate and set aside.
  • Heat the ghee in a saucepan, over moderate heat and drizzle half of melted ghee over the flour.
  • sprinkle the cardamom powder into it and work them together with your fingers until they form a crumbly-textured mixture.
  • Reheat rest of the ghee, still in the pan and fold in the above mixture gradually, while stirring them all together until coated well with the ghee.
  • Cook the mixture, while stirring often, until it turns golden brown and turn off the heat; keep it aside to cool.
  • Meanwhile, to make the syrup, pour water into a large saucepan and stir in the sugar.
  • Heat the mixture until it begins to simmer and cook likewise for about 10 minutes, while stirring often, until the sugar dissolves completely.
  • Pour a splash of milk into the transparent sugar syrup and skim off the black impurities of the sugar, floating on the surface of the mixture.
  • Give it a good stir to mix well and continue to simmer the mixture until it thickens.
  • Check its consistency by touching the syrup coated spatula with your forefinger and press it against your thumb.
  • If a single thread of syrup is formed when the fingers are pulled apart, then your syrup is ready; this is known as the single-thread consistency.
  • Fold the browned, ghee-coated flour into the cooled sugar syrup and beat them into the mixture until well combined into a uniform blend, free of lumps.
  • Tip the contents of the pan into a lightly oiled shallow plate and spread it evenly to level it out.
  • Sprinkle chopped nuts on top and set aside for about 4-5 hours to cool and set.
  • Once set, slice it into small bite-sized squares and spread an edible silver foil on top.
  • Serve and tuck in!
