How to Make Spicy Waffles With Chocolate Maple Syrup

Ingredients needed to make Spicy Waffles With Chocolate Maple Syrup:
For the waffles:
- 2 cups bread flour
- 1/3 cup hot milk
- 2 eggs
- 2 tbsp packed brown sugar
- 1 tbsp molasses
- ½ tsp salt
- ½ cup unsalted butter
- 1 ¼ tsp instant dry yeast
- 1 tsp vanilla extract
- ¾ cup pearl sugar
- 1 tsp ground ginger
- ½ tsp ground allspice
- ½ tsp ground nutmeg
- 1 tsp ground cinnamon
For the syrup:
- 3 tbsp maple syrup
- 3 oz semi-sweet chocolate, coarsely chopped
Cooking instructions for Spicy Waffles With Chocolate Maple Syrup:
- To make the waffles, pour the hot milk into a medium bowl and stir in the butter until it melts completely.
- Crack the eggs into it while beating them into the mixture with every addition until all of them are blended together into a uniform mixture.
- Add a splash of vanilla extract, along with the molasses and stir them all together until the later dissolves completely.
- Fit a standing mixer with dough hook attachment and place the flour into its bowl.
- Add the yeast, salt, brown sugar, nutmeg, ginger, cinnamon as well as allspice and mix them thoroughly at low speed.
- Pour the milk-egg mixture gradually in a steady stream while beating them into the mixture at increased speed.
- Continue to process the mixture at medium speed for about 7-8 minutes until the ingredients leave the sides of the bowl and gather together to form a smooth, slightly sticky dough; scrap out the sides of the bowl during this process if required.
- Lightly grease a bowl with oil and transfer the dough into it.
- Roll it along the sides of the bowl to coat lightly with oil, cover and let it rest for about an hour to let it rise to double its previous size.
- After an hour, switch on the waffle maker and add the pearl sugar to the dough.
- Knead them together and set aside until the waffle iron preheats.
- Split the dough into seven parts, each of about 7 oz and spread each of them across the hot iron.
- Cook the waffle for a couple of minutes or until it turns golden brown; make rest of the waffles similarly.
- While the waffle cooks, make the syrup by stirring its ingredients together in a small microwave-safe bowl and cooking it in the microwave for half a minute or until the chocolate melts.
- Whisk the mixture until well combined into a smooth, glossy syrup and heat for another 15 seconds.
- Serve the warm waffles on plates and drizzle this chocolate maple syrup on top.
