How to Cook Japanese Curry Rice

Serves: 4-8

Cooking time: 1 hour

Ingredients needed to make Japanese curry rice:

  • 4 cups Japanese style rice, cooked
  • 1 lb pork
  • 2 carrots
  • 1 + 2 onions
  • 2 potatoes
  • 1 tsp garlic, grated
  • 1 tsp fresh ginger, grated
  • 1 + 3 cups water
  • 1 tsp beef bouillon
  • 1 tsp chicken bouillon
  • 1 tbsp cooking oil
  • 1 tbsp curry powder
  • ½ tsp garam masala
  • 2 tbsp flour
  • ¼ tsp salt
  • 2 tbsp butter

For the garam masala:

  • 1 tsp ground cloves
  • 1 tsp ground cinnamon
  • 1 tsp black pepper
  • 1 tsp ground ginger

Cooking instructions for Japanese curry rice:

  • Add all the ingredients of the garam masala into a small bowl and toss them well together to mix.
  • Transfer the garam masala into an air tight container, seal and use when necessary.
  • Chop an onion, carrots and potatoes into small bite sized chunks and do the same with the pork.
  • Drizzle oil in a pan and heat it over moderate flame.
  • Throw in the pork into the pan and saute until it browns and is cooked through.
  • Throw in the vegetables, back to back, and continue to saute while stirring occassionally.
  • Pour a cup of water into the pan and heat the mixture until it starts boiling.
  • Lower the heat and continue to cook the mixture over slow flame for about 40-50 mins.
  • Empty the remaining cups of water in a separate pan and stir in both types of bouillon cubes until they dissolve.
  • Cut rest of the onions into thin slices and set aside.
  • Melt butter in the third pan and throw in the onion slices to saute them for about 15-20 minutes or until they caramelise.
  • Stir in ginger as well as garlic and continue to stir fry briefly until the mixture becomes fragrant.
  • Dust the flour on it, followed by a dash of curry powder and cook the mixture over slow flame stirring frequently to avoid the flour from sticking to the bottom of the pan.
  • Pour in the warm , prepared soup into the pan, at intervals, while you whisk the roux rigorously.
  • Continue to simmer the roux until it thickens and sprinkle the garam masala; stir it well until properly blended.
  • After the meat-veggie mixture is properly cooked, pour in the spicy roux and stir them well together to mix well.
  • Simmer the mixture for about 10 minutes and adjust the seasonings.
  • Spoon it over cooked Japanese rice and serve hot.
