How to Make Banoffee Pie

Serves: 6-8

Ingredients needed to make Banoffee Pie:

For the caramel:

  • 14 fl oz can condensed milk
  • 3 ½ oz caster sugar
  • 3 ½ oz unsalted butter

For the pie:

  • 3 large bananas, chopped
  • 8 oz pecans, halved
  • 5 oz digestive biscuits, crushed
  • 10 ½ oz double cream
  • 3 oz butter, melted
  • Cocoa powder, for dusting

For the caramel sauce:

  • 4 fl oz coconut milk
  • 4 oz soft light brown sugar
  • 4 oz unsalted butter

Cooking instructions for Banoffee Pie:

  • To make the caramel, melt the butter in a saucepan and add the sugar.
  • Heat the mixture over slow flame, while stirring at times, until the sugar dissolves.
  • Stir in the condensed milk and heat the mixture until it begins to boil, while stirring constantly.
  • Remove the pan from heat as soon as it thickens and gives out the smell of a caramel; set aside to cool.
  • To make the pie, toss half of the pecans and crushed  biscuits together into a bowl and add a knob of butter to it; stir them all together and set aside.
  • Tip the contents into the bowl into a 10’’ cake mould and press the surface firmly to level the surface.
  • Stir the chopped bananas into the caramel and stir them well together.
  • Transfer the mixture on top of the biscuit base and spread them across the first layer.
  • Place the pie in the refrigerator for half an hour to chill and set.
  • Whip the double cream rigorously until they form soft peaks and spoon it onto the caramel-banana mixture.
  • Spread it evenly across the surface of the banoffee layer.
  • Arrange rest of the pecans on top of the whipped cream layer, in a circle, and dust the surface evenly with cocoa powder.
  • To make the caramel sauce, melt butter in a heavy bottomed pan over moderate heat and pour in the coconut milk.
  • Add the sugar and stir it until it dissolves while you heat the mixture until it begins to boil.
  • Continue to cook the mixture for about 3-4 minutes or until they form a light and thick golden brown caramel syrup.
  • Carve out thick slices of the banofee pie and serve them on dessert plates.
  • Drizzle the caramel sauce over them and serve chilled.
