How to Make Chickpea Barfi with Glazed Carrots

Serves: 6-8

Ingredients needed to make Chickpea Barfi with Glazed Carrots:

For the barfi:

  • 2 cups fresh coconut, finely grated
  • 1 cup chick pea flour
  • 3 cups sugar
  • ½ cup clarified butter or ghee, melted
  • 1 cup whole milk
  • ¼ tsp ground cardamom
  • Handful of cashew nuts, roasted

For the glazed carrots:

  • 2 carrots
  • 1 tbsp vegetable oil
  • 2 tsp honey
  • Pinch of salt to taste

Cooking instructions for Chickpea Barfi with Glazed Carrots:

  • Empty the cups of coconut and chick pea flour into a deep bottomed vessel and toss well to mix.
  • Pour in the milk as well as sugar and combine into a smooth mixture.
  • Place the vessel on heat and cook over slow flame, while stirring constantly, until the sugar melts and the mixture dilutes slightly.
  • Continue to cook the mixture for another 10-15 minutes or until it gathers up together and leaves the sides of the vessel.
  • Drizzle most of the ghee over it and sprinkle the ground cardamom on top.
  • Stir them all together and cook the mixture for another 5 minutes.
  • Grease a flat plate with rest of the ghee and set aside.
  • Once bubbles begins to appear in the mixture, transfer it to the pre-greased plate.
  • Spread it swiftly across the plate with a spatula and level the surface with the same.
  • Set aside until it sets and start preparing the glazed carrots in the mean time.
  • To make the honey glazed carrot, rinse the carrots and peel off its skin before grating them finely.
  • Heat oil in a separate pan and add the grated carrots.
  • Stir-fry them for about 5 minutes or until it softens and turns golden.
  • Drizzle the honey over them and continue to cook the carrots for another 5 minutes, while stirring often.
  • Season with a pinch of salt and stir well to mix.
  • Remove from heat and set aside.
  • Once the mixture sets, slice it diagonally into diamond shapes or ‘barfis’ and keep it aside again until they cool to room temperature.
  • Lift the barfis carefully, one by one, onto a serving plate and spoon a tsp of honey glazed carrots on top.
  • Place a roasted cashew nut on top of each barfi and serve at room temperature.
