How to Make Panna Cotta with Roasted Figs

Ingredients needed to make Panna Cotta with Roasted Figs:
For the panna cotta:
- 3 ½ oz white chocolate, broken into pieces
- 18 fl oz double cream
- 4 gelatine leaves, soaked in warm water for 10 minutes and water squeezed out
- 5 ½ fl oz milk
- 1 oz sugar
For the sauce:
- 12 oz raspberries
- 6 oz sugar
- Splash of cherry liqueur
- 6 fl oz water
For the figs:
- 4 tbsp clear honey
- 4 figs, marked with a crossed pattern using a sharp knife
Cooking instructions for Panna Cotta with Roasted Figs:
- Warm up your oven to 400 degrees F.
- Spread the figs on a baking tray and smother them with the honey.
- Place it into the oven and roast for about 8-10 minutes or until they soften and the honey caramelises; remove from oven and set aside.
- To make the panna cotta, pour the milk into a saucepan and whisk in the cream.
- Heat the mixture over high flame until it just begins to simmer.
- Lower the heat and stir in the sugar, along with the white chocolate until they melt and are mixed thoroughly into the mixture.
- Turn off the heat and stir in the soaked gelatin until they melt; set the mixture aside until it cools down to room temperature.
- Divide the mixture into 4 ramekins and place them in the fridge for about 5-6 hours or until they are set.
- To cook the sauce, add water to the pan along with a splash of orange liqueur and stir in the sugar.
- Heat the mixture over moderate heat until the sugar dissolves and it begins to boil.
- Lower the heat and continue to simmer the sauce for a while if the sugar hasn’t dissolved yet.
- Remove it from heat and stir in half of the raspeberries.
- Tip the contents of the pan into a food processor and pulse them into a smooth sauce.
- Strain it throwugh a fine sieve and stir in rest of the berries.
- To serve, fill a baking dish with warm water and place the ramekins in it; this will make the panna cotta easier to demould.
- Invert each ramekin onto a serving plate and spoon some of the sauce over each panna cotta.
- Place a roasted fig on top of every panna cotta and serve.
