How to Cook Poached Pears
Serves: 8

Cooking time: 40 mins
Ingredients needed to make Poached Pears:
- 4 pears
- 3 ½ oz Stilton
- One bottle (75 cl) superior-quality port
- 2 cloves
- Two 6’’ cinnamon sticks
- 3 ½ oz walnuts, toasted
- 3 ½ fl oz honey
Cooking instructions for Poached Pears:
- Peel the skin off each pear and place them on a deep-bottomed saucepan.
- Bathe them in the port and scatter the whole spices around it.
- Add a splash of honey and bring the mixture to a boil.
- Reduce the heat slightly and simmer it for about 20 minutes over moderate heat, until they soften.
- Lift the pears up and set them aside in a plate to cool them slightly.
- Slice them longitudinally into two equal halves and scoop out their cores with the help of a melon baller or simply a teaspoon.
- Slice off a small portion from their base to flatten it out so that they can sit without toppling off.
- Reheat the spice-infused port and bring it to a rolling boil.
- Continue to boil it rigorously until it reduces into 4 tbsp and remove from heat; set aside.
- Warm up your grill to high.
- Toss the walnuts and stilton into a food processor and pulse them into fine crumbs.
- Stuff small spoonfuls of the crumbly mixture within the hollowed cavity in each pear half and arrange them on a baking dish.
- Grill the pears for about 5 minutes or until the cheese melts and transfer each of them onto a plate.
- Drizzle the reduced sauce over the poached pears and serve.
