These fried meatballs made with bulgar wheat take a bit of time to make but are well worth the wait.

Ingredients

  • 2 lb ground beef
  • 1 cup bulgar wheat
  • 2 garlic cloves, minced
  • 1 onion, finely chopped
  • ½ cup mint leaves
  • 1/3 cup fresh parsley leaves, finely chopped
  • 1 ½ cup beef broth
  • ¼ tsp nutmeg
  • ½ tsp ground cinnamon
  • Sea salt and black pepper to taste
  • 2 tbsp olive oil
  • Vegetable oil, for frying

Instructions

Spread the bulgar wheat across a bowl and set aside.

Boil the beef broth in a stockpot and pour it over the wheat; set aside for half an hour.

Drizzle 2 tbsp olive oil in a pan and throw in the garlic as well as half of the onions.

Sprinkle the spices and saute until the onions turn lucid and fragrant.

Stir in 1/3 of the meat and continue to cook, while stirring frequently, until it browns.

Add the parsley as well as the seasonings and stir fry for another couple of minutes before turning off the heat.

Pour the soaked bulgar wheat into the colander and press to squeeze out any of the excess broth.

Transfer it to a food processor, along with the uncooked beef, mint leaves and rest of the onions.
