How to Cook Gulab Jamun

Ingredients needed to make Gulab Jamun:

  • ¼ cup semolina flour
  • ¼ cup all purpose flour, sifted
  • 1 egg
  • 1 tbsp plain yogurt
  • ½ tsp baking powder
  • 2 ½ cups sugar
  • 8 cups whole milk
  • 1 tsp rosewater
  • 1/8 tsp saffron threads
  • 8 cardamom pods, cracked
  • 3 tbsp ghee or clarified butter, plus extra for deep-frying

Cooking instructions for Gulab Jamun:

  • Pour the milk in a 4 quart saucepan and bring it to a boil.
  • Reduce it to a simmer and continue to cook over moderately low heat for about 4 hours, stirring at times, until it reduces to 1 ½ cups.
  • Remove from heat and set aside until it cools down completely.
  • Empty the cups of sugar into a 1 quart saucepan and pour in 1 ¾ cups of water.
  • Stir in a splash of rosewater, saffron as well as the cracked cardamom and bring it to a boil.
  • Bring it down to a simmer and continue to do so for the next 8-10 minutes, stirring often, until the sugar is dissolved completely; set aside to cool down to room temperature.
  • Pour the thickened milk into the canister of a stand mixer, add the flours as well as the baking powder.
  • Mix them together, using the paddle attachment, until well combined and crack the egg into it.
  • Spoon in the yogurt as well as clarified butter and continue to work them together with the mixer until they gather together to form a dough.
  • Wrap it up in a cling film and let it rest for about 10 minutes.
  • Pour enough clarified butter in a 6 quart pan until it stands 2’’ from the base and heat it to 275 degrees F.
  • Split the dough into 16 portions and roll each of them into round globes.
  • Drop them into the hot oil, few at a time, and deep fry them for about 12-15 minutes, or until they are dark brown in colour.
  • Drain them out into a plate, lined with kitchen paper to get rid of any excess ghee in it and rop them into the cooled sugar syrup.
  • Set aside for half an hour to let the syrup seep into the deep-fried balls.
  • Drain them out onto serving bowls and serve.
