How to Cook French Onion Soup

Ingredients needed to make French Onion Soup:

  • 4 lb onions, thinly sliced
  • 8 country bread slices, each ½’’ thick and halved diagonally
  • 2 cups gruyere cheese, grated
  • 2 cups low sodium beef broth
  • 1 cup dry white wine
  • 1 tbsp fresh thyme leaves, chopped
  • 6 tbsp unsalted butter, diced
  • Sea salt and freshly ground black pepper to taste

Cooking instructions for French Onion Soup:

  • Toss the butter chunks into a skillet and melt it over moderately high heat.
  • Throw in the onions and season with ¼ tsp of black pepper as well as 1 ¼ tsp salt
  • Saute them for about 12-15 minutes, stirring at times, until they soften.
  • Lower the heat slightly and continue to cook, uncovered, for another hour, while stirring the mixture occasionally, until the onions caramelize.
  • Add a splash of white wine and give it a good stir until before cooking it further for a couple of minutes or until it thickens slightly.
  • Pour in the beef broth, followed by 6 cups of water and heat the mixture until it starts boiling.
  • Reduce the mixture to a simmer and continue to do so for about 15 minutes at moderately low heat.
  • Meanwhile, warm up your broiler.
  • Arrange the bread slices on a heat-proof baking sheet and broil each side for a minute or two, until they turn crispy golden brown.
  • Top each slice with grated cheese and toast further for another couple of minutes or until the cheese melts.
  • Ladle the soup into serving bowls and divide the toast between each serving.
  • Garnish with chopped thyme and serve hot.
