How to Bake Parmesan Shortbreads

Yields: 35-40 shortbreads

Preparation time: 30 mins

Cooking time: 30 mins

Ingredients needed to make Parmesan Shortbreads:

  • 5 ½ oz all purpose flour
  • 3 ½ oz unsalted butter, softened
  • 3 oz parmesan cheese, finely grated
  • 1 egg yolk

Cooking instructions for Parmesan Shortbreads:

  • Dump all the ingredients into the bowl of a food processor and run it until they clump together to form a smooth, golden dough.
  • Lightly dust your working surface with flour and place the dough onto it.
  • Knead it briskly for half a minute or until it smooths out and split it into two equal halves.
  • Roll the first portion into a uniform cylinder of about 1 ¼ ‘’ inch diameter.
  • Press the ends to flatten them out to make it appear like a roll of coins and wrap it up in a pastic sheet, twisting the free ends on the either side seal.
  • Place the roll in the fridge and make another cylinder with the other half of the dough in a similar fashion; let them rest in the fridge for about 45 minutes
  • Warm up your oven to 375 degrees F and line a baking sheet with parchment paper.
  • Take them out of the oven, peel off of the plastic sheet and cut out thick slices, each of ½’’ thickness, from each cylinder; they should resemble ½ pound coins.
  • Arrange the dough coins onto the lined baking sheet, spaced apart and bake them in the oven for about 20 minutes or until they brown slightly along the edges.
  • Remove from oven and leave them in a wire rack until they cool to room temperature.
  • Store them in an airtight container and tuck them in whenever you are hungry.
