How to Make Frozen Apricot Parfait With Orange Sauce

Ingredients needed to make Frozen Apricot Parfait With Orange Sauce:
For the apricot parfait:
- 4 apricots
- 2 gelatin leaves
- 2 egg whites
- 7 fl oz double cream
- 1 vanilla pod, split and seeds scrapped out
- 2 ½ oz caster sugar
For the orange sauce:
- 1 large orange
- ¼ cup orange juice
- 1 oz sugar or more to taste
- 1 vanilla pd, split and seeds scraped out
Cooking instructions for Frozen Apricot Parfait With Orange Sauce:
- To make the parfait, soak the gelatin in cold water until it softens.
- Scoop out the stones from the apricots and transfer them to a small pan; throw away the stones.
- Add the casing and seeds of the vanilla pod to the apricots and cook them over slow flame; add a splash of water to make them easier to cook.
- Once the fruits break down, discard the pod and transfer them into a food processor.
- Pulse them into a smooth puree and strain it through a fine sieve.
- Return the strained puree into the pan and bring it to a gentle simmer.
- Squeeze the gelatin leaves to remove any excess moisture and add them to the apricot puree.
- Stir them well together until they dissolve and continue to heat over slowest flame.
- Add the egg whites and sugar into a heatproof bowl and place it on a double boiler.
- Fill the lower vessel with simmering water and whisk them thoroughly into a light and fluffy mixture.
- Pour in the warm apricot puree and fold them together into a uniform mixture.
- Turn off the heat and set aside to cook slightly before you place them in the refrigerator to chill.
- Whip the cream until it forms soft yet firm peaks and spoon it into the chilled apricot mixture.
- Fold them together until well combined and transfer it to a small, deep-bottomed baking dish, lined with cling film.
- Spread them throughout the dish and level the surface before returning the apricot mixture to the freezer.
- Meanwhile, to make the sauce, peel the orange and remove the seeds.
- Add its pulp into a pan, along with the juice and a splash of water.
- Heat it over slow flame and mash it into a smooth pulp with a fork.
- Once the mixture foams up, stir in the casing and seeds of the vanilla pod as well sugar.
- Cook the sauce for about 10 minutes, while stirring frequently, until the sugar melts and it thickens.
- Discard the pod and transfer the mixture to a food processor.
- Pulse them into a smooth puree and strain through a fine sieve.
- To serve, chop the frozen parfait into squares and place them on serving plates.
- Top it up with orange sauce and serve chilled.
