How to Bake Butternut Squash-Cheese Pasties

Ingredients needed to make Butternut Squash-Cheese Pasties:

  • 1 lb 12 oz ready-made puff pastry
  • 2 lb 3 oz butternut squash, peeled, seeded and chopped into ½’’ dices
  • 1 lb ricotta
  • 1 red onion, thinly sliced
  • 4 oz pecans, toasted
  • 20 sage leaves, shredded
  • 1 egg
  • 3 tsp plain flour, plus more for dusting
  • 2 tbsp extra virgin olive oil
  • 4 tsp pumpkin seed oil
  • Salt and freshly ground black pepper to taste

Cooking instructions for Butternut Squash-Cheese Pasties:

  • Warm up your oven to 390 degrees F and spread a parchment paper across a baking tray.
  • Toss the squash, half of the sage leaves and onion together, along with a lashing of oil and dash of seasonings until well combined and transfer them to the prepared tray.
  • Roast the veggies until they are cooked through and remove from oven to cool.
  • Split the pastry into two equal portions and roll each portion on a lightly dusted working surface, into a 24’’X8’’ rectangle.
  • Slice out three discs, each about 8’’ wide, out of the pastry sheet and spread them across a baking sheet.
  • Leave in the fridge for half an hour to rest.
  • Meanwhile, transfer the cooked veggies into a large bowl and throw in the ricotta as well as pecans.
  • Drizzle the pumpkin seed oil over the, and toss them together gently to mix well without crumbling the squash.
  • Take the pastry discs out of the fridge and allow them to reach room temperature.
  • Whisk the egg until the yolk breaks down and stir in a pinch of salt.
  • Paint this egg wash all over one side of the pastry and place 1/6 of the squash-cheese filling at the centre of each disc.
  • Fold one end of the disc over the filling and dust some flour along the free ends; pinch them close while squeezing out the excess air if any.
  • Arrange them in the prepared tray and smother their surface with rest of the egg-wash.
  • Poke them with a fork at several places and bake in the oven for about half an hour or until the filling is heated through and the pastry puffs up.
  • Take them out of the oven and set aside until cool enough to handle.
  • Serve warm.
