How to Bake Flourless Chocolate-Lime Cake

Ingredients needed to make Flourless Chocolate-Lime Cake:
For the cake:
- 1 cup almond flour
- 6 oz bittersweet chocolate, chopped
- 1 ¼ cups superfine sugar
- 1 ¼ sticks unsalted butter, softened
- 4 tsp unsweetened cocoa powder, sifted
- 6 eggs
- Zest and freshly squeezed out juice of a lime
For the Margarita cream frosting:
- ¾ cup icing sugar
- ¼ cup lime juice
- 1 cup heavy cream
- 1 tbsp triple sec
- 1 tbsp tequila
Cooking instructions for Flourless Chocolate-Lime Cake:
- Warm up your oven to 350 degrees F and spread a parchment paper across the base of a 9’’ sprig-form pan while greasing its sides with melted butter.
- Dump the chocolate chunks into a heatproof bowl, along with butter and place it on a larger saucepan with simmering water.
- Heat the mixture in the microwave oven for half a minute or until it melts completely.
- Give it a nice stir and allow to cool to room temperature.
- Crack the eggs in a bowl and whisk them thoroughly, along with sugar, using an electric mixer until it fluffs up to thrice its previous volume.
- Toss the cocoa powder and almond flour together until well mixed and fold it into the sweetened egg mixture, alternating with the melted chocolate.
- Beat them together until they blend into a uniform mixture, free of lumps and add a splash of lime juice to it.
- Sprinkle the lime zest on top and fold them into the batter until distributed evenly throughout the mixture.
- Pour it into the prepared mould and bake in the oven for about 45 minutes or until its surface sets but remains slightly soft at the centre.
- Take it out of the oven and set aside on a wire rack to cool slightly.
- Wrap it up in a clean tea towel and continue to cool completely.
- Remove from pan and invert it onto a cake plate.
- For the frosting, whisk the heavy cream in a bowl using an electric mixer, until it form stiff peaks.
- Whisk the lime juice and liqueurs together in a separate bowl and stir it into the whipped cream.
- Dust the icing sugar into it and fold it into the mixture until well combined and dissolves completely.
- Spread it across the sides and surface of the cake and level out its surface with a spatula.
- Slice and serve.
