How to Cook Mochi with Peanut Filling

Ingredients needed to make mochi with peanut filling:

For the mochi:

  • 100 gms sweet or glutinous rice flour
  • ½ cup water
  • 2 tbsp sugar
  • Potato starch
  • Food colouring of different hues of your choice

For the peanut filling:

  • ¼ cup sugar
  • 1 ½ cup peanuts

Cooking instructions to make mochi with peanut filling:

  • Empty the cups of peanuts and sugar into a food processor and pulse them into a crumb-like mixture; set aside while you make the coating for mochi.
  • Combine the glutinous rice flour and 2 tbsp of sugar together in a bowl until properly blended.
  • Pour the water into the above mixture, adding ¼ cup every time and stirring the mixture well until it is free of lumps.
  • Dissolve the food colouring in the last ¼ cup of water and pour it over the flour mixture.
  • Stir it well until the colour is distributed evenly and place the bowl on a larger bowl of simmering water.
  • Steam it over moderate heat for about 15 minutes and then stir it again into a uniform sticky dough, with a wet spatula.
  • Dust a large pan generously with potato starch and place the warm mochi dough in it.
  • Split the dough into 8 golf-sized balls and flatten each of them with your fingers.
  • Shake off any excess potato starch and place a tsp of the above filling at the center of each mochi disc. Avoid over stuffing it or it might burst.
  • Wrap the ends over the filling and seal by pinching them together with your fingers.
  • Place the mochi on your palm with the sealed sides facing down and roll it into a round ball. In case, the mochi appears too sticky, dust them with potato starch before shaping it up.
  • Make  rest of the mochi in a similar fashion and eat as it is.
  • In case, you want to cook it, heat a large skillet and place few mochi balls on it.
  • Toast the balls until their bottoms turn golden brown and harden slightly. Don’t move them until toasted properly to avoid sticking to the skillet.
  • Toast all the sides similarly and dip them into a bowl of soy sauce to give it a savory touch.
  • Mochi also tastes yummy when filled with red bean paste, ice cream or chocolate ganache.
  • So enjoy mochi the way you like and have fun!
