How to Cook Beef Tataki

Serves: 4-6

Ingredients needed to make Beef Tataki:

For the beef:

  • 1 fl oz vegetable oil
  • 1 lb beef fillet
  • Salt and freshly ground black pepper to taste

For the marinade:

  • 2 garlic cloves, sliced
  • 1 banana shallot, finely sliced
  • ¼’’ fresh ginger root, grated
  • Zest of a lime
  • 2 fl oz rice vinegar
  • 2 ½ fl oz soy sauce
  • 2 tbsp soft dark brown sugar

For the salad:

  • Fistful of watercress
  • Fistful of bean sprouts
  • 2 tsp pickled ginger
  • 1 shallot, sliced
  • ½ cucumber, sliced

For the dressing:

  • Juice and zest of a lemon
  • 2 fl oz rice vinegar
  • 2 fl oz soy sauce
  • 1 tbsp soft dark brown sugar
  • 1 chili, finely chopped

Cooking instructions for Beef Tataki:

  • Drizzle oil over the beef fillets and rub the salt plus freshly ground black pepper all over them, on either side; set aside.
  • Place a heavy bottomed frying pan over moderate flame to heat it and place the meat on it.
  • Fry them for a minute before flipping them over to cook the other side for another minute; turn off the heat and transfer the beef fillets into a resealable plastic bag.
  • To make the marinade, whisk the lime juice, soy sauce and rice vinegar together in a small bowl.
  • Add the brown sugar and continue to stir until it dissolves.
  • Add rest of the ingredients of the marinade into the above mixture and stir them all together until well combined.
  • Drizzle this marinade blend over the beef, seal the bag and flip it several times to coat the meat well with the mixture; set aside in the refrigerator for at least a couple of hours to marinate and chill.
  • Meanwhile, divide each element of the salad onto the serving plates, arranging them in a pleasant manner and set aside.
  • Whisk the rice vinegar and soy sauce together in a separate small bowl and stir in the brown sugar until it dissolves.
  • Add the lime zest as well as the chopped chili to the dressing and stir well to evenly distribute them throughout the mixture.
  • Drizzle this dressing over the salad and set aside.
  • Remove the chilled beef from the bag and carve out very thin slices.
  • arrange the slices over the salad and serve cold.
