How to Cook Cinnamon-Infused Dates

Ingredients needed to make Cinnamon-Infused Dates:
For the dates:
- ½ tsp ground cinnamon
- 3 ½ fl oz white wine
- 3 oz dates, stoned and flesh chopped
For the meringue topping:
- 2 tbsp clear honey
- 3 ½ oz caster sugar
- 2 egg whites
Cooking instructions for Cinnamon-Infused Dates:
- To prepare the dates, toss them into a heavy-based saucepan and pour in a splash of white wine.
- Sprinkle ¼ tsp ground cinnamon over them and heat the mixture over moderate heat until it starts simmering.
- Continue to do so for 5 minutes, while bathing the dates with the cinnamon-infused sauce from time to time.
- Tip it into a shallow serving dish and set aside.
- To make the meringue topping, place the egg whites in a bowl and beat it rigorously with an electric mixer until they form soft, moist peaks.
- Sprinkle the sugar into it while beating it into the cream at the same time until all of it is incorporated into the mixture, which in turn forms stiff peaks.
- Spoon it into a piping bag and pipe it out onto the dates in a spiraled patter, starting from the centre, until all the dates are completely covered.
- Sizzle the meringue with the help of a chef’s blow torch until it turns golden brown.
- Warm up your grill to maximum possible temperature and grill the meringue for a couple of minutes or until it turns golden brown.
- Spoon the dates into the middle of a serving plate along with the meringue topping and smother with a lashing of honey.
- Sprinkle rest of ground cinnamon over them and serve right away.
