How to Make Summer Fruit Parfait

Ingredients needed to make Summer Fruit Parfait:

  • 4 ½ oz all butter vanilla biscuits
  • 3 ½ oz blueberries
  • 8 ¾ oz strawberries
  • 1 ¾ oz white chocolate
  • 10 ½ oz cream cheese
  • 7 ½ oz whipping cream
  • 1 tsp vanilla extract
  • 2 oz icing sugar
  • 1 oz caster sugar
  • 4 tbsp black current liqueur

Cooking instructions for Summer Fruit Parfait:

  • Add half of the strawberries to a bowl, along with the blueberries and pour in 2 tbsp of the black current liqueur.
  • Toss them well to mix properly and set aside for an hour to marinate.
  • Stuff the vanilla biscuits into a resealable plastic bag and crush them with a rolling pin; spoon it into 4 medium wine glasses and set them aside.
  • Place the chocolate into a heatproof bowl, which in turn is nestled in a larger vessel filled with simmering water.
  • Heat the chocolate over moderate heat until it melts completely to form a silky and shiny mixture; remove from heat and set aside to cool to some extent.
  • Whisk the cream cheese with an electric mixer until it turns smooth.
  • Stir in the caster as well as icing sugar, along with the vanilla extract and continue to whisk them thoroughly until the sugar dissolves.
  • Pour the whipping cream into a separate bowl and whisk them thoroughly until they form firm peaks.
  • Fold the whipped cream into the smooth cream cheese mixture until well combined and spoon the blend into two bowls.
  • Add rest of the strawberries into a food processor and pulse them into a smooth puree.
  • Pour the puree into cream cheese mixture in one of the bowls and pour in rest of the black current liqueur.
  • Whisk them together until properly blended and set aside.
  • Fold the melted white chocolate into the other cream cheese mixture until well mixed.
  • Top the crushed biscuit base layer, in every wine glass, with spoonfuls of the above mixture, followed by the white chocolate-cream cheese mixture.
  • Leave them in the fridge for an hour to chill and remove them from there just before serving.
  • Arrange the marinated berries over the final layer of the parfait to decorate and serve chilled.
