How to Make Strawberry Fool
Serves: 6
Preparation time: 15 mins + 2 ½ hours (inactive)
Cooking time: 10 mins
Ingredients needed to make Strawberry Fool:
- 12 oz strawberries, rinsed, hulled and chopped into large chunks
- 1 cup heavy cream, chilled
- ½ cup + 2 tbsp granulated sugar
- ½ tsp vanilla extract
- 1 ½ tsp fresh lemon juice
- ½ tsp lemon zest, finely grated
- Pinch of fine salt
Cooking instructions for Strawberry Fool:
- Dump the strawberry chunks into a medium saucepan along with ½ cup sugar as well as a dash of salt and give it a nice stir to coat the berries well with sugar.
- Smash them into a smooth paste, with few chunks remaining, using a potato masher and cook it over high flame for about 5 minutes, stirring at times, until the mixture turns bubbly.
- Skim off the froth gathering on the surface and add a splash of lemon juice into it.
- Sprinkle the grated lemon zest and stir them all together until well combined.
- Bring it to a rolling boil and continue to do so for a couple of minutes.
- Turn off the heat and get rid of the foam over its surface.
- Tip the sauce into a large bowl and set aside to cool completely.
- Place the cooled sauce in a fridge and chill it for half an hour.
- Empty the cup of cream in a large bowl and whisk it thoroughly until it forms soft peaks.
- Spoon in rest of the sugar as well as vanilla extract and whisk further until well mixed and the mixture forms stiff yet moist peaks.
- Set ¼ cup of strawberry sauce aside and fold rest of it into the whisked mixture until they blend thoroughly, leaving only few swirls of the sauce visible to us.
- Spoon it into 6 serving bowls and drizzle reserved sauce over them.
- Return it into the fridge to chill for a couple of hours.
- Serve chilled.
