How to Make Strawberry Fool

Serves: 6

Preparation time: 15 mins + 2 ½ hours (inactive)

Cooking time: 10 mins

Ingredients needed to make Strawberry Fool:

  • 12 oz strawberries, rinsed, hulled and chopped into large chunks
  • 1 cup heavy cream, chilled
  • ½ cup + 2 tbsp granulated sugar
  • ½ tsp vanilla extract
  • 1 ½ tsp fresh lemon juice
  • ½ tsp lemon zest, finely grated
  • Pinch of fine salt

Cooking instructions for Strawberry Fool:

  • Dump the strawberry chunks into a medium saucepan along with ½ cup sugar as well as a dash of salt and give it a nice stir to coat the berries well with sugar.
  • Smash them into a smooth paste, with few chunks remaining, using a potato masher and cook it over high flame for about 5 minutes, stirring at times, until the mixture turns bubbly.
  • Skim off the froth gathering on the surface and add a splash of lemon juice into it.
  • Sprinkle the grated lemon zest and stir them all together until well combined.
  • Bring it to a rolling boil and continue to do so for a couple of minutes.
  • Turn off the heat and get rid of the foam over its surface.
  • Tip the sauce into a large bowl and set aside to cool completely.
  • Place the cooled sauce in a fridge and chill it for half an hour.
  • Empty the cup of cream in a large bowl and whisk it thoroughly until it forms soft peaks.
  • Spoon in rest of the sugar as well as vanilla extract and whisk further until well mixed and the mixture forms stiff yet moist peaks.
  • Set ¼ cup of strawberry sauce aside and fold rest of it into the whisked mixture until they blend thoroughly, leaving only few swirls of the sauce visible to us.
  • Spoon it into 6 serving bowls and drizzle reserved sauce over them.
  • Return it into the fridge to chill for a couple of hours.
  • Serve chilled.
