How to Cook Shrimp Capellini With Lemon Cream Sauce

Ingredients needed to make hrimp Capellini With Lemon Cream Sauce:
- ¾ lb capellini or angel hair pasta
- 1 lb raw medium shrimp, peeled and deveined
- ¾ cup chives, chopped
- ½ cup parsley, chopped
- ½ cup Parmesan cheese, freshly grated
- ¾ cup heavy whipping cream
- Zest of a lemon
- 3 tbsp fresh lemon juice
- ¼ cup chicken broth
- Salt and freshly ground black pepper to taste
Cooking instructions for hrimp Capellini With Lemon Cream Sauce:
- Fill a large stock pot with water and stir in a dash of salt until it dissolves completely.
- Heat the salted water until it starts boiling and drop in the capellini to cook according to the instructions provided in its package.
- Drain them out in a colander and set aside in a large bowl.
- Pour the cream into a separate, small pot, followed by the chicken broth and whisk in a splash of lemon juice.
- Bring the mixture to a simmer at slow flame and continue to cook likewise for about 5 minutes.
- Toss the shrimps into the simmering sauce and sprinkle a dash each of salt and ground black pepper to season.
- Stir them all together to coat well and cook the shrimp in the sauce for about 4-5 minutes.
- Fold in the chopped herbs into the sauce until they are distributed evenly throughout the mixture and cook further for another minute.
- Drizzle this sauce over the pasta and toss well until the capellini is coated well with it; add a splash of water if it tends to appear dry.
- Grate the lemon zest into it, followed by a sprinkling of most of the cheese and toss further to mix well.
- Pile the pasta into four serving bowls and top each serving with rest of the grated cheese.
- Serve warm.
