How to Make Spiced Tuna Nicoise Salad

Ingredients needed to make Spiced Tuna Nicoise Salad:
For the tuna:
- 14 oz fresh tuna steak
- 4 tbsp apricot jam
- 2 tsp ground coriander
- 2 tsp ground cumin
For the dressing:
- 1 egg yolk
- 1 tsp Dijon mustard
- 2 anchovy fillets
- 1 garlic clove
- 4 oz olive oil
- Salt and freshly ground black pepper to taste
For the salad:
- 8 new potatoes, boiled
- 8 quail eggs, boiled for 2 minutes and peeled
- 4 oz French beans, blanched and halved
- 10 cherry tomatoes, roasted for 3-4 minutes
- 10 black olives
- 1 small baguette
Cooking instructions for Spiced Tuna Nicoise Salad:
- Warm up your oven to 400 degrees F.
- Smother the tuna fillets with apricot ham and set aside.
- Toss the ground coriander and cumin together in a bowl and add the tuna pieces.
- Flip them over several times to coat well with the spices amd set aside for about 20 minutes to marinate.
- Place an oven proof frying pan on the gas oven and wait until it heats up.
- Place the tuna fillets on top and cook each side briskly for about 15-20 secs or until it is slightly browned.
- Transfer the fish fillets to a pre-greased baking tray and roast them in the oven for about 5 minutes or until it is justly cooked with a pinkish tinge at the centre.
- Place the egg yolk, garlic and anchovies in a mortar and pound them into a paste with the pestle.
- Drizzle the olive oil over them, followed by a splash of lemon juice and stir them well together until properly blended.
- Whisk in the mustard, along with a dash of salt and black pepper to season and set aside.
- Throw the potatoes, olives, beans and eggs into a large mixing bowl and pour in the dressing.
- Divide the salad onto four serving plates.
- Slice the tuna steak into two equal halves and place each slice on top of the salad on each plate.
- Slice the baguette into thick slices and toast in the oven.
- Rub the garlic clove over on the slices and arrange the roasted tomatoes on top.
- Serve the tuna and salad alongside the tomato toasts.
