How to Make Kvass (Russian Bread Drink)

Ingredients needed to make Kvass (Russian Bread Drink):

  • 1 gallon water
  • 2 tsp dry yeast
  • 1 cup dried rye bread, crumbled
  • 1 cup sugar
  • 2-3 raisins

Cooking instructions for Kvass (Russian Bread Drink):

  • Chop the rye bread into small cubes and set aside for a while until it dries up.
  • Crumble a cup of the bread cubes into a large stockpot and set aside.
  • Bring water to boil in another stockpot and pour it over the crumbled bread right away.
  • Cover and let it rest for about 2 ½ hours at room temperature, agitating it with a spoon from time to time.
  • Once the bread-water mixture nearly cools down, pour 3 tbsp of warm water into the dry yeast and stir them until mixed thoroughly.
  • Empty the cup of sugar into the bread-water mixture and stir until the former dissolves completely.
  • Whisk in the yeast blend and stir them all together until well combined.
  • Wrap the surface of the bowl with a clean kitchen towel and set aside in a warm place for about 12 hours to let it ferment.
  • Pass the fermented mixture or kvass through several layers of cheese cloth, spread across the colander and strain it into a clean stockpot.
  • Transfer the kvass into plastic bottles through a funnel, leaving some space above.
  • Drop in a couple of raisins and seal the bottle tightly.
  • Set the bottles kvass aside for another couple of hours and refrigerate for 2 days.
  • Pour it into glasses and serve chilled.

    Thanks for this unfancy and practical and refreshing way for we home bakers to repurpose our bread ends. Add a little hop to the boil water and “fuck me I’m Irish” you have an unapologetic adult beverage.
