How to Make Green Pie

Serves: 8-10

Preparation time: over 3 hours

Cooking time: 30 mins

Ingredients needed to make Green Pie:

For the crust:

  • 3 tbsp unsalted butter, melted and cooled
  • 16 cool mint Oreo cookies, coarsely chopped

For the filling:

  • 2 cups heavy cream, divided
  • 3 large egg yolks
  • ¼ cup crème de menthe (green variant)
  • ½ cup granulated sugar
  • ¼ cup chocolate liqueur
  • 1 package unflavoured gelatin
  • 1/8 tsp sea salt
  • Green food colouring

Cooking instructions for Green Pie:

  • To make the crust, place the oven rack midway within the oven and warm it up to 350 degrees F.
  • Dump the cookies into a food processor and pulse them into fine crumbs.
  • Drizzle the melted butter into it and continue to run the processor until well combined.
  • Spoon the buttered crumbs into a 9’’ pie plate and spread it evenly across the sides and base of it, pressing it gently to even the layer.
  • Cover it with a plastic sheet and leave it in the refrigerator for about 20 minutes or until its firm.
  • Bake the crust in the pie plate for about 8-10 minutes and set aside on a wire rack.
  • To make the filling, whisk the eggs in a medium bowl and set aside.
  • Beat the sugar, ½ cup cream, gelatin and a dash of salt together until well combined and set aside for about 5 minutes until the gelatin softens.
  • Transfer the mixture over moderate heat and cook for a couple of minutes, until the gelatin dissolves but the mixture doesn’t boil yet.
  • Pour this hot mixture into the whisked egg yolks while beating it vigorously and return it back to the pan.
  • Heat the mixture again and stir in the chocolate liqueur as well as crème de menthe.
  • Transfer the mixture into a clean bowl and leave it in the fridge for about 20 minutes, while stirring at times, until it becomes wobbly.
  • Pour rest of the cream in a large chilled bowl and whisk with an electric mixer until it forms stiff peaks.
  • Pour the gelatin mixture into this whipped cream and fold it into a uniform mixture.
  • Add a splash of green food colouring and stir it into the mixture.
  • Spread this filling across the crust and smooth out the surface with a spatula.
  • Wrap it up in a plastic sheet and refrigerate for about 6 hours or even overnight to set.
  • Top it up with a dollop of whipped cream and serve cold.
