Serves: 8-10
Preparation time: over 3 hours
Cooking time: 30 mins
Ingredients needed to make Green Pie:
For the crust:
- 3 tbsp unsalted butter, melted and cooled
- 16 cool mint Oreo cookies, coarsely chopped
For the filling:
- 2 cups heavy cream, divided
- 3 large egg yolks
- ¼ cup crème de menthe (green variant)
- ½ cup granulated sugar
- ¼ cup chocolate liqueur
- 1 package unflavoured gelatin
- 1/8 tsp sea salt
- Green food colouring
Cooking instructions for Green Pie:
- To make the crust, place the oven rack midway within the oven and warm it up to 350 degrees F.
- Dump the cookies into a food processor and pulse them into fine crumbs.
- Drizzle the melted butter into it and continue to run the processor until well combined.
- Spoon the buttered crumbs into a 9’’ pie plate and spread it evenly across the sides and base of it, pressing it gently to even the layer.
- Cover it with a plastic sheet and leave it in the refrigerator for about 20 minutes or until its firm.
- Bake the crust in the pie plate for about 8-10 minutes and set aside on a wire rack.
- To make the filling, whisk the eggs in a medium bowl and set aside.
- Beat the sugar, ½ cup cream, gelatin and a dash of salt together until well combined and set aside for about 5 minutes until the gelatin softens.
- Transfer the mixture over moderate heat and cook for a couple of minutes, until the gelatin dissolves but the mixture doesn’t boil yet.
- Pour this hot mixture into the whisked egg yolks while beating it vigorously and return it back to the pan.
- Heat the mixture again and stir in the chocolate liqueur as well as crème de menthe.
- Transfer the mixture into a clean bowl and leave it in the fridge for about 20 minutes, while stirring at times, until it becomes wobbly.
- Pour rest of the cream in a large chilled bowl and whisk with an electric mixer until it forms stiff peaks.
- Pour the gelatin mixture into this whipped cream and fold it into a uniform mixture.
- Add a splash of green food colouring and stir it into the mixture.
- Spread this filling across the crust and smooth out the surface with a spatula.
- Wrap it up in a plastic sheet and refrigerate for about 6 hours or even overnight to set.
- Top it up with a dollop of whipped cream and serve cold.
