How to Make Mixed Fruits Gateau

Ingredients needed to make Mixed Fruits Gateau:
- 1 packet ladyfinger biscuits
- Two (9 oz) sponge flan cases
- 1 pint double cream
- 1 large punnet raspberries
- Mixed fresh fruits
- 1 jar fruit compote
- 2 tbsp brandy
- 2 oz icing sugar
- 1 oz caster sugar
Cooking instructions for Mixed Fruits Gateau:
- Grease a 7’’ spring-form pan with a lashing of oil and line it with a cling film.
- Use a 10’’ round base of a spring-form tin as a guide to carve out the centre of two sponge flan cases.
- Place one of the sponge discs into the prepared tin and set the other aside until necessary.
- Pour the double cream in a medium bowl and whip it thoroughly along with sugar and a splash if brandy until the mixture thickens and forms soft peaks.
- Leave it in the refrigerator to chill.
- Divide the each ladyfinger biscuit into two equal halves and lay them out, side by side, along the border of the ring.
- Spread the fruit compote evenly into the base of the sponge and top it up with a large splodge of whipped cream.
- Spread it out in a smooth layer so that they reach the edges of the ring, without shifting the biscuits from their place.
- Scatter the raspberries on top of the whipped cream layer and place the other sponge flan round on top.
- Give it a gentle press and place a plate on top of the ring.
- Hold it tightly against the ring and flip the entire arrangement over.
- Lift up the ring of the spring form tin carefully to remove it and leave it in the fridge for an hour to set.
- Take the gateau out of the fridge and peel off the cling film.
- Sprinkle the icing sugar on top to cover completely and decorate with the mixed fruits on top.
- Serve chilled.
