How to Cook Tomato Paella with Chorizo

Ingredients needed to make Tomato Paella with Chorizo:

  • 2 cups Arborio rice
  • 1 ½ lb ripe tomatoes, cored and sliced into thick wedges
  • 3-4 oz Spanish chorizo, cubed
  • 2 large garlic cloves, minced
  • 1 medium onion, diced
  • 2 tsp smoked paprika
  • 1 tbsp tomato paste
  • ¼ cup extra virgin olive oil
  • 3 ½ cup chicken broth
  • Large pinch saffron threads
  • Salt and freshly ground black pepper to taste
  • Minced parsley, for garnishing

Cooking instructions for Tomato Paella with Chorizo:

  • Warm up your oven to 450 degrees F.
  • Pour the chicken broth into a saucepan and heat it over moderate flame to warm it up but don’t let it boil.
  • Dump the tomatoes in a medium mixing bowl and sprinkle a dash of salt and freshly ground pepper into it.
  • Add a lashing of 1 tbsp extra virgin olive oil and toss them together to coat well.
  • Pour rest of the oil in a 10’’, oven-proof skillet and heat it over moderately high flame.
  • Throw in the garlic as well as onions and sprinkle a dash each of seasonings to taste.
  • Sauté the mixture for about 3-5 minutes, stirring at times, until they soften and gives out a pleasant aroma.
  • Pour in the tomato paste and sprinkle the saffron threads into it.
  • Add a dash of paprika and give it a nice stir to mix well.
  • Cook further for a minute and stir in the rice.
  • Continue to cook for another couple of minutes, stirring often, until the rice attains a nice shine and stir in the chopped chorizo.
  • Pour in the warm broth and stir them all together until well combined.
  • Arrange the seasoned tomato wedges on top of the mixture and pour any remaining juices on top.
  • Place it in the hot oven and cook for about 15 minutes.
  • In case the rice tends to appear dry, add a splash of more broth and return it to the oven to roast further for another 5 minutes.
  • Once the rice absorbs all the cooking liquid and is cooked through, switch off the oven and let the paella rest for about 10 minutes.
  • Take it out of the oven and garnish with chopped parsley.
  • Pile it up onto serving plates and serve right away.
