How to Cook Cheese and Vegetable Soup with Garlic bread

Ingredients needed to make cheese and vegetable soup with garlic bread:

For the soup:

  • ½ cup cabbage, shredded
  • 1 onion, chopped
  • 4 large tomatoes
  • 1 medium tomato, chopped
  • 225 gms baked beans
  • 1/3 cup carrots, grated
  • 1 bay leaf
  • 2 tbsp oil
  • ½ tsp sugar
  • Salt and freshly ground black pepper to taste
  • 4 peppercorns
  • 2 cloves
  • 2 cinnamon sticks
  • 4 tbsp Parmesan cheese, grated

For the garlic bread:

  • 4-5 garlic cloves
  • 6 hot dog rolls
  • 1 tbsp butter

Cooking instructions for cheese and vegetable soup with garlic bread:

  • Chop the tomatoes into big chunks and add them to a stockpot.
  • Pour in 5 cups of water on it and cook them over moderate heat until it soften.
  • Transfer the cooked tomatoes into a blender to form a puree and strain it through a fine mesh.
  • Squeeze the pulp to extract as much juice as possible and throw away the pulp.
  • Drizzle oil in a pan to heat it over moderate flame and throw in the onions.
  • Drop a bay leaf in it and stir-fry for about half a minute before stirring in the carrots as well as cabbage.
  • Continue to saute the veggies for another minute while stirring often and pour in the strained tomato juice.
  • Whisk the cornflour into small amount of cold water until it dissolves and stir it into the simmering soup.
  • Tie rest of the spices in a muslin cloth and place it into the center of the soup.
  • Sprinkle a dash of salt to season and bring the soup to boil.
  • Continue to do so for about 20 minutes and stir in the chopped tomatoes and beans.
  • Stir sugar into the soup until it dissolves and season with black pepper.
  • Bring the soup back to boil and remove from  heat.
  • Do away with the spice bag and ladle it into soup bowls.
  • Top it up with grated cheese and place it into an oven, set at grill mode, to cook it for about 5 minutes or until the cheese melts.
  • Meanwhile, slice each bread roll horizontally into two equal halves.
  • Crush the garlic cloves and whisk them into the softened butter.
  • Spread this butter across the whiter side of the bread and arrange them on a greased baking sheet while the soup cooks in the oven.
  • Once the soup is ready, remove from oven and place baking sheet with the rolls into the oven.
  • Grill them at 400 degrees F until they turn crispy golden brown and serve hot with the steaming soup.
