How to Cook Rum-Glazed Shrimps

Ingredients needed to make Rum-Glazed Shrimps:

  • 32 medium  shrimps, peeled, deveined, shelled but tails retained
  • 1 ripe, firm mango, peeled and sliced into 1’’ thick slivers
  • 2 bunches watercress, tough stems chopped off
  • ¼ cup dark rum
  • ¼ cup + 1 tbsp fresh lemon juice
  • 1 tbsp fresh ginger, peeled and finely grated
  • 3 tbsp dark brown sugar
  • 2 tbsp vegetable oil, plus more for greasing
  • 1 ½ tsp cornstarch
  • Kosher salt and freshly ground black pepper to taste

Cooking instructions for Rum-Glazed Shrimps:

  • Soak 12 wooden skewers in a bowl of water and set aside for 15 minutes.
  • To prepare the glaze, whisk the ginger, sugar and rum in ¼ cup lime juice until well combined.
  • Pour the mixture into a small saucepan and heat it over high flame until it begins to boil.
  • Reduce to a simmer and continue to cook likewise for about 3 minutes, while stirring it at times, until it thickens slightly.
  • Dissolves cornstarch in a tbsp of water until well combined and pour it into the simmering mixture.
  • Whisk them together until they blend properly and continue to cook briskly for half a minute or until it thickens further.
  • Turn off the heat and set aside to allow it to cool.
  • Insert each skewer through 4 shrimps and rub a dash of seasonings all over them.
  • Insert a couple of mango slices in each of the remaining skewer smother them with a generous lashing of prepared glaze.
  • Warm up your outdoor grill to moderately high heat and grease the grill rack with a lashing of olive oil.
  • Arrange the skewers on the hot grill rack and grill for about 3-4 minutes per side, or until they get charred at places and the flesh of the shrimps turn opaque, indicating that they are cooked through.
  • Spoon rest of the fresh lime juice into a large bowl and drizzle a splash of oil into it.
  • Sprinkle a dash of salt as well as pepper and whisk them thoroughly until well combined.
  • Throw in the watercress and toss them together until well coated.
  • For serving, arrange a bed of dressed watercress across each serving plate and place a couple of skewered shrimps and one mango skewer on top of each.
  • Serve right away.
