How to Make Potato Salad With Salmon

Ingredients needed to make Potato Salad With Salmon:
- 600 gm large potatoes, rinsed and halved
- 3 cm fresh horseradish, peeled and grated
- 400 gm smoked salmon, sliced
- Zest and juice of 1 lemon
- Small bunch frsh dill, coarsely chopped
- 150 ml crème fraiche
- 2 tbsp capers, soaked and drained
- Splash of red wine vinegar
- Sea salt and freshly ground black pepper
- Extra virgin olive oil, as required
Cooking instructions for Potato Salad With Salmon:
- Drop the potato halves in a pan and pour in water until the potatoes remain completely immersed in it.
- Bring the water to a boil over moderately high heat and continue to do so for about 20 minutes or until the potatoes are cooked through.
- Tip them into a colander to drain and set the potatoes aside.
- Pour half of the lime juice and a splash of vinegar into a bowl and grate the lemon zest into it.
- Drizzle a good lug of olive oil into it, about 3 times the volume of the lime juice-vinegar mixture and whisk them together, along with the capers.
- Adjust the seasonings and set aside.
- Scoop out the flesh of the potatoes into small balls and drop them into the prepared dressing.
- Toss them together until coated well with the dressing and sprinkle the chopped dill over the potatoes.
- Toss further to mix well and set aside.
- Place the crème fraiche in a separate bowl and stir in the grated horseradish until well combined.
- To serve, arrange the smoked salmon slices on top of a large serving platter and place the potato salad over it.
- Add a large splodge of the crème fraiche on top and add a lashing of olive oil over them.
- Garnish with rest of the dill and serve alongside rustic country bread.
