Korean Rolled Omelette (Gyeran Mari) with Hoisin Sauce
This Korean Rolled Omelette recipe is based on the traditional Korean egg roll dish known as Gyeran Mari. It is a roll made of eggs, carrots and scallions that it suitable as a main dish for any meal, not just breakfast.
Ingredients
- For the rolled omelette:
- ½ small carrot, finely chopped
- 1 scallion, finely chopped
- 3 large eggs
- ¼ tsp salt
- Vegetable oil, for frying
- For the hoisin sauce:
- 4 tbsp soy sauce
- 1 tbsp honey
- 1 tsp chinese hot sauce
- 2 tsp seasoned tice vinegar
- 2 tbsp peanut butter
- 1 garlic clove, minced
- 1/8 tsp black pepper
- 2 tsp sesame oil
Instructions
- Crack the eggs into a bowl and whisk them with a fork until they blend into a pale yellow mixture without any streaks of white.
- Season with a dash of salt and set aside.
- Pour a tsp of vegetable oil in a medium size non-stick pan and spread it throughout the pan with a paper towel.
- Heat the oil over moderately low heat and pour half of the whisked egg into the pan.
- Tilt the pan slightly by lifting the handle and make a circular motion to spread the egg throughout the pan, into a circle.
- Sprinkle the chopped vegetables throughout the runny upper surface of the omelette and continue to cook until the runny side sets slightly yet remains moist.
- Lift one edge of the egg with a spatula and fold it over the filling.
- Meanwhile lower the heat to prevent the bottom of the omelette from burning.
- Lift the folded edge of the omelette and fold it again.
- Shift the half-folded omelette towards the rolled side and pour in rest of the whisked egg onto the other side.
- Spread it by tilting the pan slightly to cover the space’ let the portion set and keep rolling the omelette, starting from the folded side, until the omelette forms a 2’’ long cylinder.
- Carefully lift it up from the pan and lower into a flat working surface.
- Set aside for about 5 minutes to cool slightly and then slice the omelette roll into even pieces, each about an inch thick.
- To make the hoisin sauce, whisk the soy sauce, honey, rice vinegar and hot sauce together.
- Add the peanut butter and continue to whisk the mixture until it is properly blended into the sauce.
- Stir in the minced garlic as well as a dash of black pepper and add a lashing of sesame oil over it.
- Whisk it for the last time and pour it into small serving bowl.
- Arrange the rolled omelette pieces on a serving platter and place the bowl of dipping sauce by its side.
