How to Cook Duk Boki (aka dukbokki or tteokbokki)
Dukbokki (Duk Boki) also known as tteokbokki is a spicy dish of rice cakes in a peppery sauce. It is a well-known Korean street food.
About Dukbokki aka Tteokbokki
Wonderfully chewy rice cakes are stir fried and cooked in spicy sauce and eaten from a bowl. Think of the rice cakes as taking the place of pasta in European or American dishes.
When rice cakes are fried they get a wonderful crispy exterior and chewy interior texture that works well with a wide range of sauces. Often they are paired with spice.
You can buy rice cakes at nearly any Asian grocery store. They work best if soaked for a while before pan frying.
How to Cook Duk Boki (aka dukbokki or tteokbokki)
Crispy fried rice cakes in a savory and spicy sauce.
Ingredients
- 1 lb cylindrical rice cakes, chopped into 2’’ chunks
- 1 package fish cake, sliced into 1’’ chunks
- 3 shiitake mushrooms, soaked and sliced
- 2 tsp minced garlic
- 2 cups Napa cabbage, chopped
- 1 tsp hot chilli pepper powder (kochukaru)
- 1 tbsp hot chili pepper paste (kochugang)
- 1 ½ tbsp soy sauce
- 1 tbsp sugar
Instructions
- Place the rice cake chunks in a bowl and fill it up with cold water.
- Set aside for an hour to soak.
- Meanwhile, empty 3 cups of water into a pot and stir in the kochukaru, kochugang and a splash of soy sauce.
- Sprinkle the sugar into it and bring the mixture to a boil over moderate heat.
- Drop in the fish cake slices and bring it back to a boil.
- Stir in the cabbage as well as mushrooms until well combined and drain the rice cakes into it.
- Continue to boil for half a minute and then reduce it to a simmer.
- Cook further for about 3 minutes and remove from heat.
- Let it rest until the sauce thickens slightly and serve warm.
