Ingredients needed to make KFC fried chicken:

For the marinade:

  • 1 tsp dried basil leaves, crushed
  • 1 tsp dried oregano, crushed
  • 1 tsp marjoram leaves, finely crushed
  • 2 tbsp paprika
  • 1 tsp rubbed sage
  • 1 tsp ground allspice
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp celery salt
  • 1 tsp onion salt
  • 1 tsp freshly ground black pepper

For the fried chicken:

  • 1 whole frying chicken, cut into smaller pieces
  • 1 egg, beaten
  • 2 cups all purpose flour
  • 1/8 tsp baking powder
  • 1 cup milk
  • 6-8 cups shortening, for cooking
  • ¾ tsp MSG
  • ¾ tsp freshly ground black pepper
  • 2 ½ tsp salt
  • 1/8 tsp garlic powder
  • 1/8 tsp paprika

Cooking instructions for KFC fried chicken:

  • Add all the ingredients of the marinade in a small bowl and toss them well together until properly blended.
  • Transfer this mixture into a resealable plastic bag or Ziploc bag and set aside.
  • Do away with the skin or any excess fat in the chicken pieces and add the chicken to the plastic bag.
  • Seal and shake the bag well plus flip it a number of times until the chicken is well coated with the spicy seasoning; set aside for an hour to marinate.
  • Pour the shortening into a deep-fryer and preheat it to 350 degrees F.
  • Whisk the milk into the beaten egg in a medium bowl and set aside.
  • Season the flour with MSG, salt as well as pepper, stir them well to mix thoroughly and set aside.
  • Once the marination time is over, place each chicken piece on a paper towel to soak away any excess moisture, if any.
  • Dip a marinated chicken piece into the egg-milk mixture and transfer to the bowl of seasoned flour.
  • Turn it over a couple of times to coat well with the flour and return it back to the egg-milk mixture.
  • Dredge with flour for the last time until it is generously coated and place it on a plate; coat the rest of chicken pieces similarly and stack them up in the same plate.
  • Lower the coated chicken pieces gently into the hot shortening and fry them in batches for about 15 minutes or until they turn golden brown.
  • Flip them over once while they cook to brown them evenly.
  • Transfer them to a plate lined with paper towel to soak away any excess grease.
  • Serve hot with your favorite dipping sauce.
