How to Bake Fairy Cakes

Ingredients needed to make Fairy Cakes:
- 4 oz self-raising flour
- 4 oz butter, softened
- 2 tbsp milk
- 4 oz caster sugar
- 1 tsp vanilla extract
- 2 eggs, lightly beaten
For the icing:
- 10 ½ oz icing sugar
- 3 drops food colouring
- 3 tbsp water
- Chocolate vermicelli
Cooking instructions for Fairy Cakes:
- Warm up your oven to 350 degrees F and place paper liners into cups of two 12-well fairy pans.
- Place the butter in a bowl of a stand mixer and sprinkle sugar into it.
- Beat them together until they are mixed thoroughly into a pale yellow, fluffy mixture.
- Drizzle the beaten eggs into it in a thin, continuous stream while whisking them into the mixture until full incorporated.
- Add a splash of vanilla extract into it and stir it into the mixture until mixed well.
- Dust flour into it, in batches, while folding it into the mixture with the help of large metal spoon, until all of it are used up to form a thick batter.
- Add a splash of milk and stir it in to thin out the batter slightly and divide it among the prepared pans, so that half of each paper-lined well remains filled.
- Bake them in the hot oven for 10 minutes or until their surface turns golden brown and they are baked through.
- Remove from the oven and set aside for 10 minutes to cool slightly.
- Remove them from the pans and arrange them on a wire rack to cool completely.
- While the cakes bake, prepare the icing my sifting the icing sugar in a large bowl and add a splash of water into it.
- Stir them together into a smooth blend and whisk in the food colouring until the colour is distributed evenly.
- Spoon the icing on top of the cooled cakes and allow it trickle down the sides.
- Sprinkle the chocolate vermicelli on top and set aside until the icing is set.
- Serve at room temperature.
