- 8 oz caster sugar
- 3 ½ oz macadamia nuts, chopped
- 5 ½ oz all purpose flour
- 8 oz melted butter, plus more for greasing
- 4 eggs
For the frosting:
- 4 fl oz milk
- 1 vanilla pod, seeds scraped out
- 6 oz icing sugar
- 4 ½ oz crunchy peanut butter
- 2 ¾ oz butter
Cooking instructions for White Chocolate Brownies:
- Warm up your oven to 350 degrees F and rub small amount of butter across the sides as well as bottom of one 8’’ cake tin.
- To make the batter for brownies, crack the eggs into a bowl and add the sugar to it.
- Whisk them together until the sugar dissolves and they blend into a pale, fluffy mixture.
- Drizzle the melted butter into the above mixture in a steady stream while whisking them with an electric mixer at the same time, until all of it is incorporated into the mixture.
- Add the flour to the mixture, small amount at a time and fold them into the mixture using a spatula until all of it used up and blend into a uniform batter, free of lumps.
- Sprinkle the chopped macadamia nuts as well as white chocolate into the batter and stir them until they are well distributed throughout the mixture.
- Pour the batter into the prepared cake pan and tap the sides gently to level it out.
- Place it into the oven and bake at the preheated temperature for about half an hour or so.
- Insert a skewer into the middle of the brownies; if it comes out clean then the brownies are ready.
- Remove from oven and set aside to cool.
- Meanwhile prepare the frosting by whisking the icing sugar and vanilla sugar into the melted butter with the help of an electric mixer, until they blend into a smooth and uniform batter.
- Add a dollop of peanut butter into it and continue to whisk the mixture until it is incorporated into the frosting.
- In case, the frosting becomes too tight to whisk, add a splash of milk to loosen it up a bit.
- Once the brownies cool down, spread the frosting across it and level the surface with a spatula.
- Slice it into small squares and demould them carefully from the pan.
- Arrange them on a serving platter and serve.
