How to Bake Fig-Prosciutto Pizzas

Ingredients needed to make Fig-Prosciutto Pizzas:

For the pizza dough:

  • 9 oz strong white flour, plus more for dusting
  • ¼ oz instant-yeast
  • ¼ oz salt
  • 6 fl oz water
  • 1 fl oz olive oil
  • Semolina, for dusting

For the topping:

  • 2 ripe figs, quartered
  • 4 prosciutto slices
  • 1 small onion, thinly sliced and lightly caramelized
  • Handful of rocket
  • 3 ½ oz gorgonzola
  • Dash of balsamic vinegar
  • Small handful pecorino, grated
  • Olive oil, as required
  • Salt and freshly ground black pepper

Cooking instructions for Fig-Prosciutto Pizzas:

  • To make the pizza dough, place the flour in a bowl and stir in the yeast and a dash of salt.
  • Drizzle oil into it, followed by a splash of water and work them together with your fingers or a stand mixer into a dough.
  • Place it onto a lightly oiled working counter and massage it for 10 minutes, until it smooth out and turn pliable.
  • Slice off a small knob of the dough and stretch that small dough piece with your hands into a sheet, thin enough to appear nearly transparent, while ensuring that it doesn’t tear away.
  • Roll rest if the dough into a ball and place it into a lightly oiled bowl.
  • Wrap the surface of the bowl with a moist kitchen towel and set aside for an hour to allow the dough to rise.
  • Split the dough into three portions and roll each of them into a ball.
  • Flatten out each ball onto a lightly-floured surface, into discs, using floured rolling pin and set aside.
  • Dust a flat baking tray with small amount of semolina and arrange the dough discs onto the, spaced 2’’ apart.
  • Position a baking tray, upside-down into an oven and warm it up to 425 degrees F.
  • To make the topping, arrange the onion slices on top of each pizza base and crumble the gorgonzola onto them.
  • Top it up with layers of prosciutto slices and place the fig quarters over them.
  • Smother the topping with a good lug of olive oil and add a splash of balsamic vinegar over it.
  • Sprinkle a dash each of seasonings on top and place them onto the upturned baking tray.
  • Bake for 8-10 minutes, or until the base browns and the bubbles begins to appear on the topping.
  • Scatter the rocket leaves on top of each pizza and serve warm.
