How to Cook Crepes Suzette

Ingredients needed to make Crepes Suzette:

For the crepes:

  • 4 ½ oz plain four
  • 10 ½ fl oz milk
  • 1 tsp butter, melted plus more for frying
  • 1 egg

For the sauce:

  • Juice and freshly grated zest of one orange
  • Freshly grated zest and juice of 1 lemon
  • Juice of 2 oranges
  • 2 tbsp brandy
  • 2 tbsp orange liqueur
  • 3 tbsp caster sugar

Cooking instructions for Crepes Suzette:

  • To make the crepes, crack the egg in a medium bowl and whisk in the milk and melted butter until they blend into a uniform, pale yellow mixture.
  • Fold in the flour gradually while beating it into the mixture each addition, until all of it is used up to make an even batter with minimal lumps.
  • Heat a skillet to moderate hotness and add a knob of butter to melt until it foams.
  • Ladle ¼ of the batter into the centre of the pan and spread it over the base with the back of that ladle into a thin layer.
  • Cook the bottom of the crepe for a couple of minutes or so and flip it over to cook the other side for another minute.
  • Transfer the crepe onto a wax paper and cook the other three crepes in a similar fashion.
  • Leave them in the fridge to chill while you start preparing the sauce.
  • To cook the sauce, heat a fresh skillet over moderate flame and add a splodge of butter onto it.
  • Heat until the butter melts and stir in the citrus zests and juices as well as the caster sugar.
  • Cook the mixture for about 3-4 minutes or until it thickens and bubbles appear on the surface.
  • Turn off the heat and set aside to cool slightly.
  • Take the crepes out from the fridge and fold them into quarters.
  • Stack them up onto the hot sauce and reheat the sauce back over moderate heat.
  • Smother them with a splash of brandy as well as orange liqueur and cook until the raw smell of the alcohol disappears.
  • Continue to simmer for about 2 minutes or until the crepes are warmed through.
  • Transfer the crepes onto serving plates and drizzle the hot orange sauce over them.
  • Serve right away.
