  • 1 tbsp all purpose flour
  • 1 tbsp butter, softened
  • 7 oz fresh cream
  • 1/3 cup milk
  • ½ tsp vanilla extract
  • 3 tsp cocoa powder
  • 4-5 tbsp granulated sugar
  • ½ cup water

Cooking instructions for churros with chocolate sauce:

To make the churros:

  • Pour canola oil into a large and heavy frying pan so that it stands at least 2 inches in it; set it aside.
  • Empty a cup of water into a medium sized saucepan and add a dash of salt as well as sugar.
  • Stir the mixture until the sugar dissolves and drizzle a tbsp of vegetable oil into it.
  • Heat the mixture over moderate flame and bring it to a boil.
  • Wipe out any traces of moisture from the cup which you used to measure the water and fill it upto the rim with flour.
  • Empty this cup of flour into a medium mixing bowl and stir in the baking powder.
  • Meanwhile, remove the saucepan with boiling oil-water mixture from heat and pour in a steady stream into the dry mixture while stirring it constantly with a spatula in the other hand, until they blend together into a smooth sticky dough.
  • Place the frying pan with canola oil over the gas oven  and heat it over moderate flame until its temperature reaches about 350-375 degrees F; maintain the temperature within this range
  • Stuff the dough into a large cookie press (churrera) or a pastry bag, fitted with large star tip.
  • Squeeze the dough out into the heated oil to make coiled patterns and fry until they turn golden brown.
  • Drain them off with a slotted spoon and transfer to a plate lined with paper towel to soak away any unwanted grease.
  • Break the churros into smaller strips and dust the powdered sugar over them.

To make the chocolate sauce:

  • Add a dollop of butter into a sauce pan and stir-fry the flour for about 30 seconds over slow flame, once the former melts.
  • Pour in the milk and cream, along with rest of the ingredients, except vanilla, and cook the mixture while stirring it frequently.
  • Once the chocolate melts and blends to form a thick sauce, stir in the essence and remove from heat.
  • Pour the chocolate sauce into a serving cup and serve alongside the churros.
