How to Cook Whiskey Glazed Ham with Spicy Pineapple Sauce

Ingredients needed to make whiskey glazed ham with spicy pineapple sauce:

  • 1 ham shank with bone, of about 7 lb

For the rub:

  • 2 tbsp brown sugar
  • ½ tbsp paprika
  • ½ tbsp ground cinnamon
  • 1 heaping tsp ground cloves
  • ½ tsp cayenne powder
  • 1 heaping tsp ground nutmeg
  • Dash of ground mustard

For the glaze:

  • ½ cup whiskey
  • ½ cup blackstrap molasses
  • 1 cup honey
  • 1 tbsp Dijon mustard
  • Juice of a fresh orange
  • 2 tbsp butter, melted

For the pineapple sauce:

  • 1 can (20 oz) crushed pineapple, juices reserved
  • 2 tbsp maple syrup
  • ¾ cup orange juice
  • 1 tsp ground ginger
  • 1 tbsp cornstarch

Cooking instructions for whiskey glazed ham with spicy pineapple sauce:

To make the glazed ham:

  • Carve out ½ ‘’ deep criss-cross patterns on the ham, using a sharp knife, keeping them about an inch apart.
  • Add all the ingredients of the rub in small bowl and toss them well together to mix.
  • Sprinkle this mixture on the ham and rub all over it.
  • Lightly oil the base of a 9 x 13 baking dish and place the ham on it.
  • Leave it in the refrigerator for several hours to marinate.
  • Prepare your oven by preheating it to 325 degrees F.
  • Once the ham is properly marinated, add the ingredients for the glaze in another small bowl and whisk them together until the molasses dissolves completely.
  • Drizzle it over the ham and flip the meat over a number of times to coat well.
  • Cover the surface of the ham with a foil tent and bake in the oven at the preheated temperature for about 20 minutes.
  • Brush the glaze on its surface every 20 minutes, while it roasts in the oven.
  • Once the meat thermometer, inserted into the thickest part of the ham, reads 140 degrees F, remove from oven and allow to cool for about 10 minutes while you prepare the pineapple sauce.

To make the pineapple sauce:

  • Dust the cornstarch over the crushed pineapple and sprinkle a dash of ground ginger.
  • Stir them together to combine properly into a smooth mixture and drizzle some of the reserved juice on it.
  • Whisk the maple syrup into the orange juice and cook it over moderate heat for about 5 minutes, while stirring occasionally.
  • Once the blend is clear and thickens, stir in the pineapple mixture and continue to simmer the sauce for about 15 minutes or until they thicken into a sauce like consistency.
  • Once the sauce is ready, carve out thick slices from the glazed ham and place each of them on a serving plate.
  • Spoon the pineapple sauce over it and serve.
