How to Cook Chicken With Waldorf Salad

Ingredients needed to make Chicken With Waldorf Salad:

For the chicken:

  • 2 boneless chicken breasts, cut into thick slices
  • 4 oz walnuts, roughly chopped
  • 4 tbsp olive oil
  • 2 tbsp Dijon mustard
  • Salt and freshly ground black pepper to taste

For the sauce:

  • 4 oz walnut halves
  • 2 red apples, cut into wedges
  • 2 green apples, sliced into wedges
  • 1 celery head
  • 1 tbsp fresh thyme leaves
  • Zest and juice of a lemon
  • 2 tbsp olive oil
  • 1 cup mayonnaise

Cooking instructions for Chicken With Waldorf Salad:

  • Dump the walnuts into a food processor and pulse them into a fine crumbs.
  • Smother either side of each chicken breasts with the Dijon mustard and sprinkle the salt as well as black pepper over them to season.
  • Spread the walnut crumbs across a flat plate or tray and place the chicken strips on them.
  • Toss or roll them a number of times to coat well with the crumbs and shake off any excess bits; set aside.
  • Heat a frying pan over moderate heat and pour in olive oil once the former is hot.
  • Throw in the chicken to the frying pan and saute for about 3-4 minutes, stirring often, until they are cooked through and turn golden brown.
  • Drain off with a slotted spoon to a plate lined with paper towel to absorb any excess grease.
  • To make the salad, cut divide the celery into two equal halves; slice one of it into 2’ long strips while chop the other into small pieces.
  • Place the thyme leaves in a bowl and drizzle the olive oil over them.
  • Throw in the celery strips and toss them together until well coated with the oil; sprinkle salt and black pepper to season.
  • Heat a griddle pan until it begins to smoke and sear the celery strips for a couple of minutes or until heated through; set aside.
  • Add rest of the salad ingredients into a salad bowl and toss them together to coat well with the mayo.
  • Arrange a bed of waldorf salad at the centre of each plate and place a walnut chicken over each bed.
  • Top it up with the seared celery and serve at once.
