How to Cook Grilled Corn

Ingredients needed to make Grilled Corn:
- 6 ears corn, husk on
- 1 garlic clove, minced
- 1 medium lime, sliced into 6 wedges
- ¾ cup Cotija cheese, crumbled
- 6 tbsp mayonnaise
- ¾ tsp cayenne pepper
- ¾ tsp sea salt
Cooking instructions for Grilled Corn:
- Place the mayonnaise in a small bowl and whisk in the garlic, cayenne pepper and a dash of salt until they are blended properly.
- Place the cheese in another dish, long enough to accommodate the corns.
- Warm up a grill to 350 degrees F.
- Peel the husks halfway and get rid of the fibres before pulling the husk back to place.
- Arrange them on the hot grill and place the lid on top to cover.
- Flip each corn after every 10 minutes while its grills to cook every side evenly; it should take about 35 minutes to grill every side of the corn completely.
- A properly grilled corn will sport a charred husk which tends to come off from the corn.
- Transfer them onto a wire rack and let it rest until cool enough to handle.
- Peel the husks back further without detaching them completely and smother them with a lashing of the mayonnaise blend until they are covered completely.
- Place the corns onto the shallow dish with cheese and roll along it until well coated with the latter.
- Squeeze the juice out of the lemon and drizzle it over the coated corns.
- Serve right away.
