How to Bake Tomato Pie

Ingredients needed to make Tomato Pie:

  • One 9’’ homemade pie shell
  • 3-4 ripe tomatoes, halved horizontally and juice squeezed out
  • ½ cup red onion, chopped
  • 8 basil leaves, sliced
  • ¾ cup mayonnaise
  • 2 cups assorted cheese (gruyere, sharp cheddar and mozzarella), finely grated
  • 1 tsp tabasco sauce
  • Salt and freshly ground black pepper to taste

Cooking instructions for Tomato Pie:

  • Coarsely chop the tomatoes and blot dry by patting with paper towels to get rid of any excess moisture.
  • Warm up your oven to 350 degrees.
  • Line the frozen, homemade pie shell with a sheet of aluminum foil and bake in the oven for about 20 minutes.
  • Peel off the foil and continue to bake for another 10 minutes.
  • Remove the baked pie shell from the oven and scatter the onions across its base.
  • Top it up with the chopped tomatoes and cover it with a layer of sliced basil leaves.
  • Tip the mayonnaise in a medium mixing bowl and fold in the grated cheese, along with a splash of tabasco sauce and dash each of salt plus black pepper.
  • Whisk them thoroughly until well combined to form a gooey mixture and spread it across the pie filling.
  • Place the pie in the hot oven and bake for about 45 minutes or until it is cooked through and the surface browns and bubbles appear on it.
  • Remove from oven and set aside for about 10 minutes to cool slightly.
  • Slice and serve warm.
